Cauliflower Sushi - Katrina Ellis
1 large cauliflower floret
2 teaspoons brown rice vinegar
2 teaspoons raw honey or agave
Put cauliflower in blender and blend until it is at a rice like consistency – keep it grainy. Then mix with rice vinegar, raw honey or agave until you get a sweet like taste.
Spread a layer of the mix over your nori sheet leaving one inch from the end to roll. Place your fillings inside and do a thin layer of wasabi. Roll up with a bamboo mat and slice the sushi into pieces. Serve with tamari and wasabi.
