makes 2 to 3 bowls

Salad
1 small Cauliflower
1 cup of fresh Peas
1/2 cup of Parsley
1/2 cup of Mint
2 Spring Onions or Chives, finely chopped
1 Avocado, diced
1 Red Capsicum, finely diced or Cherry Tomatoes

Dressing
4 tablespoons of Flaxseed Oil
4 tablespoons of Apple Cider Vinegar
1 Lemon, juiced

Put cauliflower in blender and pulse to make grainy. Put to the side. Blend parsley, mint and spring onions (or chives) in a processor and add to cauliflower mix with avocado and red capsicum. Pour dressing over entire salad.
