Raw Coconut and Lime Pie

Crust
Ingredients:
• 2 cups of pecans
• 8 medjool dates
• 1/8 cup coconut oil, melted
• 1/4 tsp vanilla extract
• A dash of celtic salt
Add pecans to food processor and blend until fine, add the rest of the ingredients and pulse until nicely blended, but still crumbly. Press firmly and evenly into a glass cake pan.

Filling
Ingredients:
• 6 to 8 fresh limes
• 1/2 cup of yacon syrup
• 1/4 cup coconut milk
• 2 cups of soaked cashews
• 1 avocado
• 2 tsp vanilla extract
• A dash of celtic salt
• 3 tablespoons of coconut butter
• 2 tablespoons of lecithin granules or hulled hemp seeds

Puree in a blender until creamy. Pour into crust and chill in the fridge for a cheesecake like texture or chill in the fridge for a more ice-cream like treat.

    Hi there,
    this recipe looks delicious and would like to try it out… I don’t get coconut butter where I live and was wondering if I can substitute it with something that’s still dairy free. Thanks for letting me know!

      Hi Sonia. You can make coconut butter easily using your Vitamix (or similar high powered food processor). Just get around 500 g unsweetened shredded coconut or coconut flakes and blend on high for 8-10 minutes with a pinch of salt. You may need to add melted coconut oil for consistency. Enjoy!
