Creamy Green Pepper Corn Coleslaw

Salad

4 cups of green cabbage

1 carrot, shredded

1 cup of bean sprouts

3 shallots, chopped finely

1 red capsicum, diced

1 avocado, cubed

1/2 cup of cherry tomatoes, halved

1/4 cup of black sesame seeds

Dressing

1/4 cup of olive or flaxseed oil

1 tablespoon of minced garlic or 2 garlic cloves

1 lemon, juiced

2 tablespoons of green peppercorns

1/2 cup of pre-soaked cashews

Purified water

Shred cabbage and place in a bowl with greated carrot, mung beans, avocado, capsicum, cherry tomatoes, shallots and sesame seeds. To make the dressing, process garlic, celtic salt, lemon juice, green peppercorns and cashews with water. Add the oil at the end. Pour over the salad and let sit for a few minutes before serving. A yummy summer salad – brilliant for boosting the metabolism and improving thyroid gland function.
