Fennel salad with lemon & thyme dressing
2 lemons, juiced
1/4 cup of macadamia oil
A handful of thyme, diced
Grate fennel bulbs – add grated carrots, parsley, cucumber, and celery. Add some chopped walnuts. Pour dressing over the top and enjoy.
