Recipe: Raw Tomato Sauce

It may surprise some that the second largest ingredient in store bought tomato sauce is sugar. It is easy to make Tomato sauce at home that is family friendly and healthy and this recipe will be enjoyed with many meals.

Tomatoes are abundant in carotenoids, with the most famous of them being lycopene, which helps prevent several types of cancer, particularly stomach, lung prostate and breast cancer.

Lycopene is a potent antioxidant that attacks free radicals that trigger cancer and is particularly effective against breast, intestinal and pancreatic cancers when consumed with foods rich in natural fats like olive oil, nuts or avocado. Lycopene also protects against the toxic effects of radiation therapy, especially the burning of tissues.

Ingredients
Makes 1 tub of sauce

2 fresh Tomatoes (look for ripe roma tomatoes)
1/2 to 1 cup of sun-dried Tomatoes
3 cloves of Garlic
4 organic Medjool dates, pitted
1 tablespoon of Tamari
1/4 cup of Apple Cider Vinegar
Handful of fresh Basil leaves
1 teaspoon of Celtic salt
a Little purified water

Method
Put all ingredients into a blender or processor and puree.

This delicious sauce (or ketchup to some!) can be used as a base for a vegetable pasta, on raw pizza bases, or as tomato ketchup (just add more water).

    How long will this keep?

      Hi – it will keep for around 1 week in the fridge – unless you add some vitamin C or ascorbic acid and it will preserve it longer x
