Teriyaki Noodle Salad

Teriyaki Noodle Salad

¼ cup of apple cider vinegar (raw)
¼ cup of tamari (low sodium)
A chunk of ginger
2 garlic cloves
1 blood orange or a navel, squeezed
2 teaspoons of agave or 2 medjool dates or stevia

Salad
2 zucchini
A large handful of bean sprouts
1 red capsicum, diced
A handful of coriander, shredded
½ purple onion, diced
½ portabello mushroom or baby mushrooms, sliced

Use a spiralizer or a spirooli to turn the zucchini into beautiful noodle like strands. Place in a bowl with bean sprouts, capsicum, coriander, onion and mushrooms. In a processor, blend the sauce ingredients.

When ready, pour a little over the salad mix to marinate. Place the salad mix onto 4 plates and pour the rest of the sauce over the top. This tastes great with shredded almonds or black sesame seeds on top. I love this salad and I hope you do too!!!
